Healthy Treat: Clean Chocolate Mousse

When I decided eating cleaner about a year ago, I knew I had to do something about my chocolate addiction. If you’re like me, then you know the feeling of just having to HAVE that one bite of chocolate after any meal. After my first ever juice fast, I switched to dark chocolate (at least 70%) and only had a bite or two at a time. It does the trick to satisfy my chocolate cravings but it does get old (and boring) really fast. Thank goodness for Pinterest and Paleo desserts!

Here’s a recipe that has quickly become my favorite! It’s also great for entertaining as it looks fancy schmancy with good presentation (when in fact it only has 4 ingredients and takes 10 minutes to make).

Ingredients
2 cups full-fat coconut milk
100 g of 70% to 90% dark chocolate, chopped into small pieces (I used Milagros chocolate and Lindt)
1 tbsp high-quality gelatin
½ tsp vanilla extract

Instructions
1. Heat the coconut milk on medium-low in a heavy-bottomed pot. You want to warm it enough to dissolve the gelatin but not boil. Add the chocolate and whisk constantly until it melts.
2. Once the chocolate has melted, whisk in the gelatin by slowly pouring as you whisk.
3. Turn off the heat and whisk in the vanilla extract.
4. Pour into your desired glasses or cups and chill for at least 2 hours or until set. I used some cute tea cups and dessert cups.

The result is a surprisingly smooth and creamy dark chocolate pudding that hits the spot every single time!
