On our last trip to New York, someone tipped me off on the yummiest (and cleanest!) treat, Acai bowls from Juice Generation. The hubby and I ended up going back three or four times to fuel up before a big day in the city. They are filling, refreshing and totally guilt-free. Not to mention they’re packed with super foods and wholesome ingredients that provide top notch nourishment to the body. But at $9-10 a pop, they don’t come cheap.
I’ve been trying hard to watch what I eat during my second trimester. I spent my first trimester just looking for any food that I wouldn’t spew back out – which meant anything from Quarter Pounder Meals to all kids of pastas (agh!). Now that my body lets me eat anything I want again, I’m slowly trying to get back into my clean eating habits.
I’ve been dreaming about Acai bowls for so long and I’m so glad that I figured out a way to make it at home. Here’s the recipe:
4 tbs acai powder
2 cups frozen berries
1 cup almond milk or coconut water
1/2 cup baby spinach leaves
1 tsp honey
Almond or peanut butter
1. Blend the acai powder, frozen berries, milk, spinach leaves and honey together. Add a little more almond milk or water if it is too thick. The texture should be a little thicker than a regular smoothie.
2. Add your favourite toppings!
